  • Go lighter than you think: It’s easier to add smoke than remove it. Start small, adjust next cook.
  • Wood form matters: Chunks for charcoal smokers, splits for offsets, pellets for pellet grills. Chips burn fast—use in pouches.
  • Avoid resinous softwoods: No pine, fir, spruce, cedar—resins can taste bitter and produce unpleasant compounds.
  • Let wood breathe: Clean, thin blue smoke beats thick white smoke. Manage airflow, not just fuel.
  • Match richness: Bigger cuts and higher marbling (e.g., USDA Prime, Wagyu/Kobe) can handle bolder woods like hickory and oak.
